III.Juice and Beverage Processing: Clarification, Deastringency, and Concentration
Juice Clarification
When processing apple juice, grape juice, orange juice, etc., ultrafiltration can intercept macromolecular impurities such as pulp particles, pectin, and cellulose (with molecular weights> 10 kDa) while allowing clear juice to pass through. This replaces traditional processes like centrifugation, enzymatic hydrolysis, or diatomaceous earth filtration.
For example: After ultrafiltration, grape juice becomes transparent without the need for clarifying agents, preventing sedimentation and retaining vitamins and flavor compounds.
Deastringency and Impurity Removal
For beverages containing astringent substances (such as tannins, which have large molecular weights) — like persimmon juice and olive juice — ultrafiltration can intercept astringent components to improve taste.
It also removes tea residues and colloidal particles from tea beverages, producing clear, transparent bottled tea.
Low-Energy Concentration
Compared to evaporation concentration (high energy consumption), ultrafiltration can concentrate juice at room temperature by retaining soluble solids. This reduces the loss of volatile flavor substances (e.g., aromatic components) and is particularly suitable for heat-sensitive juices such as strawberry juice and mango juice.
