Chondroitin sulfate is a macromolecular polysaccharide (glycosaminoglycan, GAG) that is a key component of the extracellular matrix (ECM) of cartilage. It is extremely hydrophilic and can absorb many times its own weight in water, providing lubrication and cushioning for the cartilage. Together with collagen and other substances, it forms a network structure that gives cartilage its strength and elasticity, enabling it to withstand mechanical stress. The human body can synthesize chondroitin sulfate, but this rate slows with aging. This, combined with chronic wear and tear on the joints, can lead to cartilage thinning and degeneration, potentially causing osteoarthritis.
