Vitamin B2 (riboflavin) is a water-soluble vitamin with the chemical formula C₁ₐH₂O₄N₄O₆ and a relative molecular mass of 376.37. It appears as a yellow to orange-yellow crystalline powder. It is slightly soluble in water and readily soluble in dilute sodium hydroxide solution. It readily decomposes in the presence of light. Its main food sources include milk, eggs, and green vegetables. It participates in biological oxidation processes as a coenzyme. Deficiency can lead to metabolic disorders such as angular cheilitis and cheilitis (due to reduced enzyme activity, which affects energy metabolism). It is clinically used to prevent and treat related diseases and is an essential nutrient for maintaining normal growth.
Vitamin B2 can be produced through fermentation or chemical synthesis. In my country, in addition to meeting medical needs, it is also used as a food additive in cereal products, dairy products, and infant foods. As a colorant, its maximum usage in dried vegetables is 0.3 mg/kg.
