Freeze-dried cherry powder is a natural nutritional supplement and food ingredient made using cutting-edge "freshness-locking" technology. It's more than just cherry powder; it's a highly concentrated form of cherry's nutrients and antioxidant potential. 1. Raw material pretreatment
Cleaning and disinfecting: After rinsing the fresh fruit with running water, it is put in a solution of sodium hypochlorite (200 mg/L) for 15 minutes to kill germs.
Pulping: Pitting by hand or machine, and the pulp is crushed into pulp (without adding water).
2. Pulp treatment (optional)
Homogenization: Centrifugal filtration of pomace, retaining juice or pulp.
Addition of auxiliary materials: Pure fruit powder is not added; when fluidity needs to be improved, ≤40% oxidized starch or maltodextrin can be added.
3. Quick freezing
The slurry is quickly frozen below **-30℃** to form micro ice crystals to protect the cell structure.
4. Drying with vacuum
Drying: Heat to -30℃** in a vacuum environment (1.3×10⁻⁴ mbar) to sublimate 90% of water.
Heat to 35°C and remove bound water to get 5% moisture or less.
Protects 98% vitamin C and tastes and looks like fresh fruit.
5. Crushing and packaging
Freeze-dried blocks are ground into powder (80-100 mesh), nitrogen-filled and sealed to avoid light for storage (≤25℃, humidity ≤40%).
