The ST007BP dual head gluten analyzer is a specialized instrument used to determine the gluten content and quality (gluten index) of flour. The gluten index is used to evaluate the strength of gluten. This instrument is suitable for the determination of wheat flour and whole wheat flour, widely used in food and flour processing, grain and oil research institutions, grain storage and other departments. Easy to operate and accurate in measurement. Technical indicators shall comply with the national standard GB/T5506.2-2024 "Wheat and wheat flour gluten content - Part 2: Instrumental determination of wet gluten and gluten index"

Working theory:

10g flour or wheat flour, added with 5ml brine, mix into dough in a cup with sifter for 20 seconds. Then wash it in brine for 5 min, and thus get gluten. With the centrifugal force, you can calculate the wet gluten content and gluten index by means of SB/T 10248-95.
