Polysorbate 81 (Tween 81), chemical name Polyoxyethylene (5) sorbitan monooleate, HLB value 10.0, is a moderately lipophilic nonionic emulsifier. It is an amber-colored, viscous, oily liquid, slightly soluble in water and readily soluble in organic solvents; it is resistant to acids and alkalis, has good compatibility, and excellent emulsifying, dispersing, stabilizing, and lubricating properties.
