(1) Aggregate structure
Sodium hexametaphosphate is not a simple "hexamer", but a cyclic or chain polymer composed of 10 to 20 PO₃⁻ units. This structure endows it with:
High charge density: It can strongly adsorb metal ions.
Molecular flexibility: It can stretch in solution, enhancing the dispersion effect.
(2) Mechanism of Action
Chelating effect: It softens water quality by forming stable and soluble complexes with oxygen atoms such as Ca²⁺ and Mg²⁺.
Colloid protection: Adsorbed on the surface of particles, forming an electrostatic barrier to prevent agglomeration (such as stabilizing ceramic slurry).
Corrosion inhibition function: Forms a protective film on the metal surface to inhibit oxidation.
2. Special Performance and advantages
High-temperature stability
It is stable below 80℃ and suitable for heat-processed foods (such as canned foods and high-temperature sterilized beverages).
It will gradually hydrolyze into orthophosphate when the temperature exceeds 100℃, and the process temperature needs to be controlled.
(2) Synergistic enhancement
When compounded with STPP (sodium tripolyphosphate), it can enhance the decontamination power of detergents.
It can be used together with carrageenan and konjac gum in food to improve the gel strength.
(3) Environmental protection compatibility
Although it contains phosphorus, it can be removed by chemical precipitation in sewage treatment, and it is easier to control eutrophication than nitrogen-containing additives.

As a food additive (E452i), it can improve the texture of food, prevent protein denaturation and retain moisture (such as in meat and seafood processing).
