Introduction:

Maltose monohydrate, with the chemical formula C12H22O11·H2O, is a white crystalline powder and belongs to reducing sugar. It is easily soluble in water. The solubility of maltose monohydrate in water is 1080 g/L (20°C). It has a sweet taste but weaker than sucrose.

Uses:

Sweetener; hygroscopic agent. It is mostly used in low-sweetness foods. Although the sweetness is reduced, the concentration remains unchanged, so it can inhibit the reproduction of microorganisms and achieve the purpose of long-term preservation. Its hygroscopicity can prevent the crystallization of candies, and can also improve the structure of food to keep it soft for a long time. It is also suitable for sweetening natural fruit juices.
